This bulk bag of Organic Cane Juice Crystals contains 100% certified organic sugar cane. The sugar cane hails from Ecuador, where it is grown in highly mineralized volcanic soil.
While both white refined sugar and Cane Juice Crystals are made from sugar cane, sun-dried Cane Juice Crystals do not undergo the same degree of processing that refined sugar does. Unlike refined sugar, the nutrients are retained and available in the Cane Juice Crystals.
These cane juice crystals are fresh pressed, then sun-dried, and then put through a cooling process to crystallize. This is a "first crystallization" sugar which means the cane is harvested, the juice is extracted, all impurities are removed, and then it is crystallized. This is all done within twenty-four hours of the harvest. Because it is far less processed than traditional white sugar, it retains a natural blond color and a delicious natural taste.
Cane juice is not a commonly allergenic food and is not known to contain measurable amounts of oxalates or purines. The crystals are a nice fine grain, so they dissolve easily into oils and liquids.
